Off day. Upset when I got an sms from Alvin saying that Cal was not teaching on that day and that JW was taking over. Almost died after his 2 classes. Woke up the next day with a headache. Actually wanted to go for balance class but since he was not teaching I gave up the idea. Next week ba...

Miserable day and day of meeting and gym-less. Always seemed to have never ending work before flying off. Stayed backed in office till 1130pm to do ISO and 100-day project stuff. Anyway the highlight of the day was Cal's class. And oh...Paragon gym finally has a resolution for their studio. They are going to do reflooring. Finally..like after 1 month of 'trying to come up with resolution'....

A long time special friend....
My special friend Si***, who 'graduated' many years ago visited me in office today. He was the one who would call once a year after he 'graduated' :))
Few days back I was just thinking about him and had the feeling that he was going to call very soon. And today it happened!! Really, if my intuition could be that accurate when it comes to Totos and 4Ds I would be very rich by now.
Anyway, glad that he is doing well. He was my very first transferred case when I began at PSB. Also the first case whom I had to br*** because he did something wrong.
Few days back I was just thinking about him and had the feeling that he was going to call very soon. And today it happened!! Really, if my intuition could be that accurate when it comes to Totos and 4Ds I would be very rich by now.

Was just thinking on my way to work this morning that there surely must be a new brown folder lying on my table....and ta-dah....very 准。Not surprisingly la, since I was off yesterday and brown folders had this trend of appearing on our tables when we were not at our desks.
I am going to keep track of this trend from now on.....wahahaha.....nothing better to do...

Survived
Yes! I survived JW's and Cal's classes today. Ah the 2 incorrigible and horrible monsters of FF..
Today we did not have to do the full version of the new release because the 3 weeks period of having to do the full version was up. However, instructors had to retain half the number of tracks from the new release and then incorporate with other tracks they chose from the old releases. Needless to say, these 2 monsters retained the more difficult tracks from the new release and then also added the difficult tracks from other releases.
Sort of strained my right wrist at JW's class. But so far so good, no pain unless I purposely bent it.

Managing expectations...
is a very sian, or should I say very tiring thing sometimes...

Recipe for ondeh ondeh
Skin:
250g sweet potato
200g glutinous rice flour
50g pandan juice
100g coconut milk
Filling:
200g gula melaka
Coating:
200g grated coconut
salt
- Wash, peel and cut sweet potato into cubes then steam till easy to mash.
- Mash sweet potato in big bowl. Add sifted glutinous rice flour and mix well.
- Add pandan juice and coconut milk. Mix and form into dough.
- Wrap gula melaka with small pieces of dough and shape into small balls. Place the balls into boiling water. Scoop up with strainer when balls float on the water.
- Steam grated coconut with salt. Coat balls with the salted steam grated coconut.
I decided to make this impromtu today as the ingredients were easily available. Also happened that I printed out this recipe from Jinny and had it in my bag.
I used 50g of water and 2 teaspoons of pandan essence to replace the pandan juice. It is just too troublesome to blend the pandan leaves in the blender just to get some 50g of pandan juice!! :D
Ta-dah....the final product..

1 teaspoon of salt
2 tablespoon of sugar
1 stick of butter, chilled
2 tablespoon of grated orange zest, optional
2 cups of heavy whipping cream
1 large egg white, lightly beaten
1 teaspoon of water
Preheat oven to 375 degree ferenheit (about 190 degrees celsius). Lightly grease and flour baking sheets. In a large bowl, stir together the flour, baking powder, salt and sugar. Cut the butter into the dry mixture and use a pastry blender or fork to blend until mixture resembles coarse bread crumbs. Stir in orange zest if using. Add cream and mix together to form a soft dough.
Turn dough onto floured surface and knead gently for a minute. Divide dough into half (keep one half covered) and roll or pat out into thinkness of 1/2 inch. Cut out dough with 2-inch round cutter, dipping the cutter into flour as needed. Placed about 1 inch apart on prepared baking sheets.
Combine egg white and water. Brush cut dough with egg white mixture and bake in the center of the oven for 15 to 17 minutes, or until golden brown. Transfer to wire racks to cool slightly.
Repeat with the remaining dough, rerolling scraps as necessary. Best served warm, but can be reheated, preferably wrapped in aluminium foil in a 300 degree ferenheit oven for about 10 minutes. Can also be frozen and reheated wrapped in aluminium foil in 300 degrees ferenheit oven for about 20 to 25 minutes.
Ta-da.....my mini scones...but I made some changes to the recipe after consulting another recipe..

- Plain flour can be replaced with self-raising flour. If use self-raising flour then can do without the baking powder.
- I used HL milk instead of heavy whipping cream. I added an egg into the milk. Made a well in the center of the dry flour mixture and pour the milk and egg mixture into the well gradually. Fold in the flour. Stop adding the milk and egg mixture when dough is wet enough to bind together. Do not over add or the dough would be very sticky and cannot form into a ball.
- Butter can be replaced with margerine but I used butter.

It's dangerous to buckle up?!
Last Friday, we went for team lunch at Sakura. I took Jim Jim's car together with Wendy and Marddy; and we got into an accident! Jim's car was badly crashed at the rear but fortunately nobody was badly hurt.
It all started because of an idiotic uncle who don't know for what reason jammed on his brakes. So ended up Jim Jim got to e-brake. It was really e-brake lor because her tyres were screeching.
At first we thought everything was fine after Jim applied the e-brake because she did not bang into the stupid car in front. However, before we knew it another car rammed Jim's car from behind!
I was sitting at the back and was literally thrown front-wards when Jim applied the e-brake. And I thought there was an earth quake when the other car came from behind. Fortunately Jim's front seat had head rest and I knocked onto the head rest....
Marddy was not so fortunate though. She had belted up and she said that she had backache after that. Possibly it was a mixture of the backache she already had and the impact from the accident.
What made Marddy and I so angry was that the stupid uncle who caused Jim to e-brake actually drove away after he came down to check his car and was satisfied that Jim did not knock into his car!!!! Walao! Did he not know that the accident happened because of him?! Although legally speaking he was not at fault, at least he should have the courtesy to stay back and ask if he could be of any help la!!!!
Later we found out that the lady who banged into Jim's car already had an accident earlier that morning. She was on her way to the mechanics to repair her car when this accident happened. She even said she was not aware if her brakes were working. True enough, later Jim told us that she had seen her car from the rear view mirror and was puzzled why she did not brake when she saw Jim's car not moving.
Another irresponsible driver lor!! Must teach these people victim impact siah. If not sure whether the car was in working condition anot should call the tow car ma!! 自己想死也不用拉别人一起死吗!

Seemingly harmless.....

Bought this pair of pretty pink shoes yesterday at Tangs sales. Very pretty..and seemingly harmless....

What if I showed it from this angle?!

And tell you that I had plasters on my toes because of abrasions from it?


And that I decided that I would rather pass off the combination of slippers and work clothes as a new 'fashion statement' than fall flat on my face when alighting from the bus. So, I changed into slippers on the bus on the way to gym.
However, I decided to give it another chance after gym. So I decided to wear it home instead of the slippers. This time I tightened the strap around the ankle...

See the strap? Yes, tighten it such that my feet would not slip out so much and cause rubbing against my toe and I won't feel like toppling over when walking. Ah......finally found the cure to make it less harmful after a 'not so steady and feel like toppling over so often' day...:D
My special friends
I shall start with my special friend De**** who made my day by calling this morning. He caught me by surprise! He called to inform that he was out since last month and is currently working at subway - forced by the parents he said...haha...He had also enrolled into Shatec and is due to start his classes in Apr!!
Though I had a 'miserable' 2 days at work filled with nothing but meetings, such calls from these special friends make me very happy :D
Another of my very naughty special friend Ale**** who is going to leave me soon in March also made me raise eyebrows today. :D...
We were just chatting about how the past months had been for him, how things had changed for him and if it would be any different after March 09. He suddenly told me: ''1 day something just crossed my mind leh....that I've actually been spending my parents' money for the past 20 years. I think it's time I do something about it. It is not to late hor?!'
It makes me happy to know that the past months had done him good, it may not neccesarily be because of us, but the fact that he is now all grown up made all the work worth it..
Then this special friend suddenly counted the number of diamonds on my ring. This is the level of comfort I like with my special friends, of course when there is no need/reason to be firm/fierce/act fierce with them.
Before he left today, he said: 'You know hor, I will miss you after March leh. I will definately accompany S*** when he had to come here to see you to disturb you...'
So sweeeetttt.......:D Although the way he put it - 'disturb' does not sound very nice..haha...
