Recipe for ondeh ondeh

Skin:

250g sweet potato
200g glutinous rice flour
50g pandan juice
100g coconut milk

Filling:

200g gula melaka

Coating:

200g grated coconut
salt

- Wash, peel and cut sweet potato into cubes then steam till easy to mash.
- Mash sweet potato in big bowl. Add sifted glutinous rice flour and mix well.
- Add pandan juice and coconut milk. Mix and form into dough.
- Wrap gula melaka with small pieces of dough and shape into small balls. Place the balls into boiling water. Scoop up with strainer when balls float on the water.
- Steam grated coconut with salt. Coat balls with the salted steam grated coconut.

I decided to make this impromtu today as the ingredients were easily available. Also happened that I printed out this recipe from Jinny and had it in my bag.

I used 50g of water and 2 teaspoons of pandan essence to replace the pandan juice. It is just too troublesome to blend the pandan leaves in the blender just to get some 50g of pandan juice!! :D

Ta-dah....the final product..

how u make the pandan juice huh? n 250g sweet potato is about how many?

Pandan juice: 50g of water and 2 teaspoons of pandan essence

You can try to blend pandan leave with 50g water in blender. But I think it is too troublesome so I just use essence.

Just weigh the potato at the supermarket la!! Make sure you buy abit more cos after peeling the skin and cutting away not so nice parts, it'll be lesser!
