100g Koh Fun
70g Icing Sugar
30g Shortening
120g Cold Water
- Sift koh fun and sugar.
- Rub in the shortening using finger tips.
- Gradually add in cold water until mixture can be kneaded into a soft dough.
- Portion into 30g each.
Lotus Paste Filling:
200g Lotus Seeds
180g Sugar (I reduced to 120g)
160ml Oil (I reduced to 100ml)
1 Tbsp Honey
1 Tbsp Condensed Milk (I replaced with Honey)
1/8 Tsp Salt
- Soak lotus seeds for 20 minutes.
- Drain and cover with hot boiling water for another 30 minutes.
- Peel off the skin (I bought skinless one so easier to handle) and remove the green part in the center.
- Cook in water till soft and tender.
- Blend till smooth using a blender. (I used hand to mash it, so the paste still had bits of lumps)
- Melt half the sugar in a pot until golden brown.
- Add the lotus paste, oil, sugar and salt and cook using medium flame.
- Stir all the time till the paste thickens and can easily leave the side of the pot.
- Portion into 40g each.
Assembly:
- Wrap the filling with the snow skin.
- Press into the mooncake mould. (I bought the plastic one, as opposed to the wooden one. It is so much easier because it does not stick and there is no need to dust the mould with additional flour or soak it in oil to remove the wood flakes.)
- Knock out the mooncake and chill!
